The vines of Merlot and Cabernet Sauvignon, all grown espalier pruned low cordon, grow on media formats by thin turbidites (Are- refinery and Pelite), facing south, Southwest with altitude varying between 200 Hey 300 m s.l.m. Production per plant 2-3 Kg; Manual harvest in boxes 15-18 Kg.
Traditional de-stemming the grapes, fermentation at controlled temperature (26-28°C) in stainless steel tanks, maceration 8 days 2 pumping punching to say, malolactic fermentation, in stainless steel, aging in small barrels for about 8 months, bottling, then bottled in glass containers for about 3-5 months.
Description of the wine
Valcalepio shows a deep ruby red color and an intense perfume, harmonious and elegant with flavors of ripe fruit with a clear opening secondary aromas of toasted wood and cinnamon. The flavor is warm, fascinating and elegant.
